And ohhhhh, what a wonderful time of year it is.

Christmas time is my favourite eating time of the year - and it's also my favourite baking time of the year.

With so many Christmas parties and get-togethers planned each year throughout December, I love experimenting with new recipes and coming up with new treats to share with loved ones.

Whilst I definitely have my classic favourites I bake every single year (My top five? MyEasy Four Ingredient Gluten Free Fruit Cake Recipe, Super Simple Kid Friendly Rocky Road Recipe, Gluten Free Snowball Cookies Recipe, Vegan Peppermint Bark Cookies and these Unique Chocolate Bark Recipes) - but every year, you'll find me scribbling ideas in a notebook and coming up with new recipes.

This year, I decided I wanted to put an easy twist on the classic Florentine cookie recipe.

Combining chewy dried fruit with crunchy nuts and a chewy, caramel coating which is then dipped in chocolate, Florentines are the perfect indulgent cookie that just feels fancier than your average chocolate chip or shortbread cookie.

But Christmas isthe busiest time of year - and I'm sure you feel that way too.

When I'm rushing from task to task and wanting a dessert to share with friends, I just don't have the time to dip dozens of florentines in chocolate - so I came up with an easier alternative.

This Florentine Slice is super easy to make - and seriously decadent to eat. Crunchy, yet chewy with a delicious chocolate topping, it's the perfect treat to share with friends at any time of the year - but especially at Christmas time.

All you have to do is melt, mix, bake and slice!

It's also the perfect recipe to gift to friends or family members. Add pieces to a cute Christmas tin or a pretty jar, tie with a ribbon and gift away!

The slice doesneed to be kept in the fridge, so make sure you keep it in the fridge until you're ready to gift it. This slice can also be made well in advance as it will stay fresh in the fridge for a month or more.

Easy Gluten Free Florentine Slice Recipe

Chocolate Dipped Gluten Free Florentine Slice Recipe - inspired by Florentine Biscuits, this easy gluten free slice recipe is the perfect treat to share with friends and family. The perfect homemade Christmas gift and so much easier than baking a batch of cookies, this slice combines dried fruit with crunchy corn flakes, almonds and a caramel coating. Egg free.

ingredients:

  • 2 cups (60g) gluten free cornflakes
  • 1/2 cup (50g) sliced almonds
  • 1/2 cup (75g) mixed dried fruit* (see notes)
  • 100g butter
  • 50g brown sugar
  • 50g golden syrup or honey
  • 1/3 cup (40g) gluten free plain flour

instructions:

How to cook Easy Gluten Free Florentine Slice Recipe

  1. Preheat oven to 160C/320F.
  2. Line a 7x11" slice pan or 8x8" cake tin with baking paper and set aside.
  3. Add your cornflakes, fruit and nuts to a medium mixing bowl and set aside.
  4. In a small saucepan, add your butter, sugar and syrup and stir over a medium heat until your butter is melted.
  5. Turn the heat to high and bring your mixture to the boil and boil without stirring for 2 minutes. Your mix should be bubbly.
  6. Remove your pan from the stovetop and add your sifted flour, stirring until combined.
  7. Pour your caramel mixture over your cornflake mixture and mix until combined.
  8. Place your mixture into your prepared slice tin and press into the pan to form an even layer.
  9. Bake your slice for ~20 minutes or until golden.
  10. Leave your slice to cool completely before spreading with melted chocolate and placing into the fridge until solid.
  11. Once your chocolate layer is solid, slice into pieces and enjoy immediately, or keep in the fridge in an airtight container for up to a month.

NOTES:

*You can use any nuts or dried fruits you like. I used sliced almonds and a gourmet dried fruit mix which combines raisins, dates, figs, dried cranberries and currants.
